Welcome to The Lentil Diaries. Why "The Lentil Diaries" you may ask? Well the first recipe on this blog was the one that completely won over my family and convinced them that I wasn't going to be serving up cardboard and twigs everyday. That dish was Lentils and Polenta and I really hope you give it a go. When I first became Vegan, I recall sitting down with a pen and paper and trying to write a list of meals for the week. The list was uninspiring and repetitive and I quickly realised that if I was going to maintain Veganism long term, I needed to up my game. Over the months since May 2015, I've experimented and spent endless hours in the kitchen and have thoroughly enjoyed creating many, many recipes and dishes. My aim is to inspire and motivate you to get into the kitchen and cook up delicious, cruelty free, often inexpensive, healthy dishes. The possibilities really are endless and together we can hopefully dispel the myth that Vegan food can't be exciting. I'll be adding recipes for quick, everyday food, simple soup ideas, delicious main courses, snacks, sauces, ideas for more adventurous dishes, and of course, incredible desserts like the one in the picture. I hope you enjoy using this blog as much as I've enjoyed creating it.
