Fancy a sweet treat? Then these are for you... These chewy biccies are loaded with goodies. They are very easy to make, and even easier to eat!!!
The recipe will make 16 to 20 biscuits, depending on how large you like them. Ingredients 1/4 cup Vegan butter 1/4 cup smooth peanut butter 1/2 cup brown sugar 1/4 cup plant milk 1 1/2 cups plain flour 5 medjool dates stoned and finely chopped 3/4 cup unsalted peanuts roughly chopped 100g dark chocolate chopped Method Preheat your oven to 180C. Line two baking sheets with baking paper. In a large bowl, cream together the two butters and sugar until light and fluffy. I use an electric mixer for this but a wooden spoon and plenty of elbow grease will work also. Next add in the milk and approximately half of the flour and beat again until smooth. Finally add in the peanuts, dates, chocolate and remaining flour and gently mix together with a spoon until everything is well incorporated. Now go in with your hands and bring the mix to a dough. Divide the dough in half and roll each batch into a thick sausage shape. Cut discs from the dough (I did eight from each batch) and place onto the baking sheet. Flatten and shape with your hands and then straight into the oven for ten minutes. Remove and place on a wire rack to cool.
